The luxury hotel, Wanda Reign on the Bund is hosting Reign Afternoon Tea in their Lobby Lounge.
Served up on the two tier platter will be a variety of classic Old Shanghai desserts such as crispy Elle cheese cream with crispy Mille-Feuilles, classic Mont Blanc, the new Valrhona chocolate opera, swan, Lacovo jelly glass, Palmier, traditional bean paste cake, classic caramel treats, egg custard tart and pound cake with homemade strawberry jam, specialty cream, lemon curd and mango jam. These desserts are the specialties of Master Chef of the executive bakery at Wanda Reign on The Bund, Fan Wentian.
Dessert highlights include:
Classic Mont Blanc: Different from the traditional chestnut cake. The recipe uses reduced sweetness and added marshmallow for texture and packed with the "real Shanghai stuff".
Swan: Fan Wentian learned to make the authentic Swan dessert from a master craftsmen nearly 20 years ago. Nowadays, few people are willing to make this dessert in the traditional way, but the original flavor in Fan Wentian's swan still remains.
Lacovo Jelly Glass: Popular in the early 1930s in Shanghai, the drink accompanied the kids as they grew up into the 1970s. Tasting of malted milk, when mixed with water, it becomes a household drink many will remember. “The main reason I am making this dessert is to recreate the feeling of kids when they ate Lacovo secretly. The crispy Lacovo is sprayed on the chewy jelly, a cute combination,” Fan Wentian says, remembering his childhood.
To compliment the sweets, there will be the savory options of prawn cocktail with cucumber and cross bun, house smoked salmon with cream cheese and lemon brioche, Shaoxin wine-poached chicken with pickled cabbage tortilla, and vegetable empanada with curry. Decorative chocolate rickshaws and cheongsam biscuits are added as final touches.
A native of Shanghai, Fan Wentian believes that diversity and innovation are the essence of Shanghai culture. Having been a master chef at the executive bakery of several five-star hotels in Shanghai, he makes desserts that are rich in creativity and color, that have both powerful taste and visual impact. Fan Wentian has won many honors and awards in the dessert community to include Pastry & Cake Champion in the 2004 Shanghai International Food & Beverage and Hotel Catering Equipment Exhibition and the Wedding Demonstration Cake Golden Award in the 7th Shanghai Culinary Arts Competition. He has also conducted a series of dessert-making training programs in different hotels, introducing desserts to family kitchens so that more people can taste these delectable treats.
