After researching a bunch of cod recipes, acornfresh found the cod that goes particularly well with tomatoes and oranges. While you might not be convinced of this trio of ingredients just yet, follow the below steps, and you'll be happily surprised.
Braised Cod in Orange and Tomato Sauce
Ingredients:
Cod 400g
1 onion
1 orange
2-3 tomatoes
2 tbsp ketchup
Appropriate amount of oil, salt and black pepper
Instructions:
1) Thaw the cod. Better to take the cod from the freezer to the fridge the night before to keep the freshness and best taste of the fish.
2) Coat the cod with salt and black pepper, and let it marinate for 5 minutes. Cut into small pieces and then coat with starch.
3) Cut the onion, half of the orange and tomatoes into small pieces; Squeeze out juice from the other half of the orange.
4) Heat the pan with oil, fry the cod until both sides are golden.
5) Add onion into the pan, stir fry until soft; add orange, tomato and an appropriate amount of salt, stir fry.
6) Add orange juice, ketchup and an appropriate amount of water and cook until soft.
7) Put the cod pieces into the pan, soak them in the sauce and simmer for 5 minutes. Sprinkle with black pepper and it’s ready!
Roasted Cod with Miso
Ingredients:
Cod 400g
2 tbsp white miso paste
1 tbsp Mirin
2 tbsp orange juice
2 tbsp oyster sauce
Appropriate amount of ginger and scallion
Appropriate amount of oil, salt and black pepper
Instructions:
1) Thaw the cod. Better to take the cod from the freezer to the fridge the night before to keep the freshness and best taste of the cod.
2) Coat the cod with salt and black pepper, and let it marinate for 5 minutes, cut the ginger into small pieces, the scallion into small sections; Preheat the oven to 180 ° C.
3) Mix white miso paste, mirin, oyster sauce, orange juice and chopped up ginger in a small bowl.
4) Put the cod pieces on tin foil, pour the mixed sauce evenly on the cod, sprinkle some scallions and wrap them in tin foil.
5) Put the wrapped cod into a baking pan and bake in the oven for 8-10 minutes!
